I prepared this for Mike and I and it was a hit with both of us. Very simple to prepare and very filling. I shredded the chicken instead of dicing. I did not dice the celery, carrots and potatoes real fine – I wanted them to be seen!  It’s okay to use regular broth and to use any % of milk. Enjoy as much as we did!

Here’s another soup recipe that really sounds good. It has barley in it and both Mike and Helen love barley. I’m anxious to try this one!

I haven’t made this, but Helen and I were looking at some soup recipes and this really looked good. It cooks in the slow-cooker. So here it is Helen.

Down on a certain street in a certain suburb of Houston, when a certain relative of mine needs to feed a crowd with minimal hassle and maximum chances of success, she whips together a pot of her Tortilla Soup. The recipe is so easy, even a certain Texan occupying the White House could make it.

Okay, maybe not that easy, but it certainly shouldn’t be too hard for you to handle.

This is a dish for those dedicated chefs! Definitely a little fiddly to get everything together but worth every single second spent on preparation. Laksa literally means ‘ten thousand’ and although it is a little exaggerated, it does contain many different ingredients. The taste is hard to describe, a delicous coconut curry with a lovely lemon scent. A definite must for lovers of asian soups.

Soup is great on those cold days (unless you’re in Australia!). This one hits the spot. Enjoy a baguette with it!
