I had this at cooking club this weekend and it was awesome.
A morning treat for those hangover blues.
Fritatta’s sound much more fancy than they are. Some fancy French sounding name for something that is essentially a big egg pancake. But don’t tell your guests that, cuz they’ll sure be impressed when you tell them you are slaving over a fritatta! Oh, and here’s another secret – they aren’t hard to make either.
One thing to keep in mind, tho: You’ll need an oven-safe pan with a cover, and also preferably one with rounded sides, such as an omelette pan. If you don’t have one of those, get one; they’re pretty handy.
This is a great healthy way to start the day. It is the only breakfast that I have found can keep me going during a three-hour morning run. I make a big batch on a Sunday night for the whole week.
This is a highly versatile breakfast. The ingredients below are what I use. Feel free to add or ommit based on your individual taste. The only essentials are rolled oats, some type of juice and yogurt.

While up in Thunder Bay, Ontario, the one thing that Helen and I found that we just fell in love with, was the Hotoi Restaurant. There, we found their famed Finnish Pancakes, which we indulged in from time to time. I tell you, it was the best thing about that town, but now we’ve discovered the recipe for these great pancakes and are bringing them to you (free of charge, and having to go to Thunder Bay).
B and I start every day with one of these gems. It gives us a real boost and it is all healthy (despite tasting naughty). Give it a try, you will be suprised at how much extra energy you will have.
When Mike and I were staying at the B&B in Door County, we were served this for breakfast one morning. It was so delicious that I just have to share it with you.
I made this for brunch for my family day after Christmas. Served with toast. It was a go-ahead for this website!
Suggestion: after you have baked it for an hour, insert a knife in the middle and if the knife comes out runny-looking (no food sticking to the knife), continue baking for another half hour. That’s partially due to the tomatoes on top, but remember you have 10 eggs in there and you want them cooked well!
I LOVE museli. Its such a good hearty breakfast, but the problem is all the shopbought stuff is high in sugar and very expensive. My mum used to make homemade museli, which I totally hated growing up, but she didn’t toast it. I personally find it much nicer when it is crunchy, and it is one of those things you can add anything that catches your fancy.
