Simple, but good!
This was our delicious dinner last night! A fabulous way to ensure a tasty, healthy and lean meal, plus I always have arborio rice sitting around as it is such a versatile grain. You can substitute the pork with chicken if you prefer, and change around the dish as you like.
I made this also for Christmas Eve dinner. Went over well, especially with Helen and myself (we love potatoes!)
This casserole may be prepared ahead (which I did and makes the next day a little easier). If you want to make it the night before, do the following: Prepare as directed; do not bake. Cover and refrigerate up to 24 hours. Remove from refrigerator; let stand, covered, 30 minutes. Uncover and bake as directed.
Dice any leftover beef, chicken, or fish and add to these vegetable-packed potatoes. You’ll have an economical, nutritious dinner that includes most of the major food groups.
You could also try precooking these potatoes, then cooling to room temperature. Wrap and refrigerate for up to 3 days. Then just reheat in the microwave for 5 minutes.

I’ve tried this once before (a time long since passed me by — my bachelor days), and thought it was easy to make, bake, and eat … even for myself.
This is my favourite way to have mashed potato. And, before you all start wrinkling your nose over the anchovies this recipe has been tested by staunch anti-anchovy activists and come up a winner.
Most everything can be prepared on the grill (and some may argue, most everything SHOULD be prepared on a grill), including your potatoes. This little suggestion on how to cook them is very easy, tastes great, and can be prepared and packed up with you if you’re heading out to a picnic or friends for a barbecue. You may choose to add other ingredients to flavour your bake to your taste. I typically use onions as they pack a great subtle taste, and grilled onion has a very tasty, distinct flavour. Especially since most other things that I prepare on the grill utilize onion in some way or another.
