Now I think that the chocolate souffle has a bad name. It is actually extremely easy to make and delicious (plus it is pretty much carb free for those carb conscious out there). This is not the best souffle I have had (or made) but it is very simple to make.

Fritatta’s sound much more fancy than they are. Some fancy French sounding name for something that is essentially a big egg pancake. But don’t tell your guests that, cuz they’ll sure be impressed when you tell them you are slaving over a fritatta! Oh, and here’s another secret – they aren’t hard to make either.
One thing to keep in mind, tho: You’ll need an oven-safe pan with a cover, and also preferably one with rounded sides, such as an omelette pan. If you don’t have one of those, get one; they’re pretty handy.
